A boutique wine in every sense, Matt has just 1.2ha of Pinot Noir and the wine is hand crafted to let the fruit shine. Grapes for the 06 were picked on the 5 and the 11th April, the top and bottom blocks were picked and fermented separately (different clones, top block 5,6 and 10/5 (all old style), bottom block 667,777 (new Dijon clones). Ferments were around the 20 day mark, with peak temps of 340C, all stainless, new oak aging was 30%. In barrel for 11 months with inoculated malolactic in the spring, blended, fined with egg white only, lightly filtered.
