LEONILDO PIEROPAN
Pieropans estate covers 30 hectares of vineyard. Nino Pieropan is fanatical about the quality of his vineyards, all of which are south facing and situated on the stony hills of Soave Classico. Yields are low, and the quality of the grapes arriving in the winery outstanding. The vineyards are planted primarily with Garganega and rebbiano di Soave (he is probably the only producer in the zone with any of this rare variety left in his vineyards. The variety bears no relation to its more prolific Tuscan namesake). The Garganega gives structure and acidity to the wines, the Trebbiano di Soave perfume and richness of flavour.

Vinification:
After a scrupulous selection in the vineyard, the grapes were soft pressed and the must fermented in temperature controlled stainless steel tanks.
Ageing:
The wine remains in large oak casks for a short period of time in order to give it some extra weight and depth on the palate.
Tasting notes:
Brilliant straw yellow colour with greenish hints. The delicate nose is reminiscent of almond blossoms and marzipan. Good depth of fruit on the palate, nicely balanced by a zingy acidity that enhances its long length.
Alcoholic content: 12% vol
Total acidity: 6 %
Serving suggestions:
Very good with soups and fish, including fresh-water fish, and vegetable starters.

History:
The Calvarino vineyard is the original nucleus of the family homestead. Because of the difficulty of working in this winding inaccessible field, this part of the estate has always been called Calvarino (=little Calvary)
Grape variety:
70% Garganega 30% Trebbiano di Soave
Harvest:
Harvested in two or three sessions, depending on the ripeness of the grapes.
Vinification:
The grapes are gently pressed and the fermentation takes place at a controlled temperature of about 19°C
Tasting notes:
Pale straw yellow, with greenish reflections when young; golden with ageing. The aroma is fresh, flowery with aromas of elder, lemon and cherry. The palate is dry, well balanced and elegant, with tremendous length and finesse.
Alcoholic content: 12.5° vol
Total acidity: 5.5 -6
Serving Suggestion:
Best if cellared for two years after harvest. The wine goes well with a wide variety of dishes and is an ideal for accompanying vegetable terrines, cheese soufflés and tasty fish dishes.

Vinification:
Late-harvested, to ensure maximum ripeness. The grapes were gently pressed and the must fermented in temperature controlled stainless steel tanks at 20oC, and in 500 litre oak casks.
Ageing:
Garganega is too delicate to be fermented in barrique says Pieropan. 60% of the wine remained in 500 litre oak casks and the remainder was put in large botti (2000 litres) for one year. The wine then stayed for four months in bottle before release.
Tasting notes:
Brilliant and intense yellow colour. Characterful wine, reminiscent of exotic fruit and nuts on the nose. Soft and persistent on the palate, with hints of spice and vanilla.
Alcoholic content: 13 ° vol.
Total acidity: 5 5.5
Serving suggestions: Ideal with grilled fish and white meat in light sauce.

Grape variety: 100% Garganega
Vineyards:
Grapes are picked from a range of different vineyards on the Pieropan property. The vines are trained according to the traditional Veronese pergola system and are south facing.
Harvest:
This dessert wine is obtained from the shrivelled recie (ears in the veronese dialect) of the best Garganega grapes-i.e., the top part of each bunch, with the ripest and best exposed berries. After picking, the grapes are dried on straw mats for approximately five months. The grapes must not be too densely packed on the bunches to allow air to circulate well.
Vinification:
In early spring, the semi-dried grapes are pressed, and the juice is fermented and aged in large oak casks for two years.
Tasting notes:
Intense gold, almost amber coloured, reminiscent of exotic fruits and apricots on the nose, its initial impression on the palate is delicately sweet.
Serving Suggestion:
Excellent on its own or at the end of a meal, to accompany pastries, blue cheese such as gorgonzola, or mature cheese. Serve at approximately 12ºC.

Vineyards:
The grapes are grown in the La Rocca vineyard, which stretch to the Castello Scaligero and face south-east.
Vinification:
The grapes are dried until the middle of December, then pressed. The must is fermented and aged in Allier barriques for 18-24 months.
Ageing:
After two years of fining in oak casks, the wine completes its maturation in bottle for
another 6 months.

Total acidity: 6.5 7
Residual sugar: 130 g/l
Tasting notes:
Burnished gold in colour with translucent yellow reflections. On the nose, the wine is complex with a bouquet of acacia honey, cinnamon and hints of walnut husks. This is a very elegant wine, with flavours of dried apricots, honeyed fruit and vanilla.
It also has an incredible length.
