Thomas Mitchell
Approachable, food friendly and great value, Thomas Mitchell wines are soft, round everyday drinking styles.
These wines are made by the great Toby Barlow at Mitchelton, the Thomas Mitchell range lets Toby spread his wings a bit, working with fruit from further afield to create a range of quintessentially Australian wines. Cracking value and full of typically unshy Aussie fruit, the range is well worth a taste - especially if your hunting for a bargain.
Thomas Mitchell Chardonnay 2004 6x75cl

Timely Spring rains and mild temperatures resulted in an even bud burst combined with generous fruitfulness. The summer months were generally dry, with two isolated (but significant) rain events 50mm in mid December, and 80mm in the second week of February. The potentially threatening rains came to an abrupt halt before veraison and the ripening period was characterised by fine, sunny, warm days.
Winemaking Techniques
The aim of our winemaking for Thomas Mitchell Chardonnay is to preserve the fresh Chardonnay flavours through gentle pressing techniques and very cool fermentation. We supplement these flavours through judicious oak usage and mature one third of the wine in barriques for 10 months.

Winemaking Techniques
Protective winemaking techniques such as cold settling and fermentation temperatures of 12°C were used to retain varietal freshness in this wine. The fruit is handled gently in the winery with only light pressing and we aim to exclude oxygen at every step to ensure freshness.

Winemaking Techniques
The wine is fermented in both static and rotary fermenters. During fermentation the must reached 28°C for colour, flavour and tannin extraction then chilled to 20°C. After pressing, the wine is aged in oak for 10 months and then bottled prior to the next harvest.

Colour: Deep rich red Nose: Sweet blood plums with hints of vanilla and earthiness Palate: Full bodied plums with firm cabernet backbone and rounded balance. Finely grained tannins and velvety texture.
