Tempus Two
From a standing start of 6,000 cases in 1997, Tempus Two now produces in excess of 100,000 cases of wine and service markets in the UK, Philippines, New Zealand, and growing. Tempus Two produces wines from premium vineyards in South Australia, Western Australia and New South Wales. There are classic varietals such as Barossa Valley Shiraz and Hunter Valley Semillon, and regional blends that exhibit the true Tempus Two style.

Tempus Two Tempranillo 2005
Colour: Deep vibrant purple.
Nose: Lifted strawberry fruit with hints of exotic spices.
Palate: A full bodied wine with ripe berry flavours that dominate the palate and are supported by firm, finely textured tannins leaving a dry spicy finish.
General: This Spanish variety, has found a new home as a part of the Tempus Two's varietal range. The fruit was sourced from New Residence (South Australia) where the warm dry climate allowed the fruit to reach optimum ripeness thus producing deep purple colours and rich ripe berry flavours. The grapes were machine harvested in the cool of night after which they were cold soaked for 3 days, aiding in the extraction vibrant colour and integrated tannins . The grapes were then fermented in open top fermenters and hand plunged 3 to 4 times a day. Post fermentation the wine was allowed to mature in New American and French Oak allowing subtle integration of Vanillin and Spice characters adding to the complexity of this rich full bodied wine.

Colour: Pale green straw
Nose: Tropical aromas of pineapple, passionfruit, guava and citrus.
Palate: A full bodied and tangy Verdelho with intense flavour similar to the wine's aromatics: ripe tropical fruits of pineapple, passionfruit and guava. The wine finishes with a refreshingly crisp citrus finish.
General: Sourced from our premium Hunter Valley vineyards, the Spring Rock Verdelho is intended to offer the drinker outstanding quality and consistency in a brand. The fruit was harvested at night to keep the grapes cool Ð pressed immediately, the juice clarified and fermented with an aromatic strain of yeast. All of these processes ensure the pure characters of this intensely aromatic and flavoured variety are retained and consequently fully expressed in the wine.
Our Spring Rock Verdelho sees a stelvin closure rather than cork. This tighter seal will help capture all the freshness and vitality of this youthful wine.

Nose: Berry fruits, cassis, and hints of chocolate and cigar-box characters

Tempus Two Pewter Pinot Gris 2005
Colour: Pale Straw
Nose: Distinctly varietal aromatics of pear drop, perfume and fruit salad with a touch of spice.
Palate: A medium bodied wine, with powerful fruit flavours which are emulated on the nose. The rich flavoured, viscous palate is balanced by fresh lemony acidity.
General: The varieties home is Alsace, France - where despite the extreme cool climate it makes wonderful rich, intense wines, with a little residual sugar to balance the powerful fruit and high alcohol. Sourcing our Pino Gris fruit from the King Valley in Victoria which has a very similar climate has allowed us to produce an Alsacean style Pinot Gris.

Colour: Cherry red
Nose: Vibrant, rich aromas of spiced cherries, plums and ripe mulberries with subtle hints of roasted hazelnuts.
Palate: May Day Hill Sangiovese is typically savoury with great texture. Flavours include spiced, stewed plums and cherries. Complemented by the wines dusty fine-grained tannin structure, highlighting the wine's elegant and persistent finish.
General: A new entry to our Pewter range and consistent with our belief at Tempus Two - to source the varieties from the regions of Australia they are most suited to the May Day Hill Sangiovese is sourced from the Beechworth area, at the foothills of the Victorian Alps. A cooler climate region where we find the Sangiovese to express excellent varietal definition. A perfect food wine with subtle flavours and rich texture to complement most cuisine.
